High Protein Vegan & Gluten Free Lemon Meringue Cheesecake Recipe
Everyone loves cheesecake! And where can you go wrong in a high protein dessert? Using our Luxury Lemon Meringue protein bars, you can make the perfect sweet that everyone can enjoy.
250g Gluten Free Digestive Biscuits
3x Luxury Lemon Meringue Jade & Joy Bars
100g Vegan Butter, Melted (extra, unmelted, for lining)
250g Coconut Cream
600g Vegan Cream Cheese
100g Icing Sugar (extra for lining)
1. Crush your digestive biscuits into crumbs and place into a bowl.
2. Using a blender or food processor, blitz your 3 Jade & Joy Luxury Lemon Meringue bars until they are a mixture of crumbs and small chunks. Add to the bowl with the crushed digestives.
3. Add your melted butter and mix together.
4. Line a baking tin with butter and top with icing sugar to make a greaseproof surface before putting in your biscuit/bar mixture.
5. Place in the fridge overnight or for a few hours until the base hardens.
6. To make your cream cheese topping, add into a bowl your coconut cream, vegan cream cheese, icing sugar (you can sift this for a smoother texture) and lemon juice before mixing together. If you want a sweeter topping, you can add more icing sugar.
7. Spoon the cream cheese mixture onto your biscuit base and spread evenly.
8. Top with lemon zest or more Jade & Joy bars, be creative!
